Sharp cheese plays against sweet onions in a seriously delicious burger, made lighter with lean beef.

Serves 4

Ingredients
1/2 cup (60 g) crumbled blue cheese
1/4 cup mayonnaise
2 tsp chopped fresh thyme, divided
1/4 tsp hot chilli sauce (such as Tabasco)
1 pound lean ground sirloin
1 tsp freshly ground black pepper, divided

1/8 teaspoon salt
1/2 tsp extra-virgin olive oil
4 (5 mm thick) slices purple onion
2 tsp sherry vinegar
4 sourdough hamburger buns, toasted
4 (5 mm thick) slices tomato
2 cups loosely packed rocket leaves

Method
Preheat grill to medium-high heat.
Combine 1/2 cup blue cheese, mayonnaise, 1 teaspoon thyme, and hot chilli sauce in a
small bowl; stir well.

Divide beef into 4 equal portions, shaping each into a 1.5 cm thick patty. Sprinkle beef
evenly with 1/2 tsp freshly ground black pepper and salt.

Brush oil evenly over both sides of onion slices; sprinkle with remaining 1/2 tsp black
pepper. Place the patties and onions on grill rack coated with olive oil; cover and grill for
3 minutes on each side. Set patties aside; keep warm. Cook onion slices until soft and
slightly golden; toss with remaining thyme and the sherry vinegar.

Spread cut sides of buns evenly with mayonnaise mixture. Arrange 1/2 cup rocket
leaves on bottom half of each bun; top with one patty, one onion slice, and bun top.
