Adapted from a recipe by Martha Stewart.

A refreshing salad, you could easily increase the amounts given to serve at a big family Christmas celebration. (This recipe serves four.)

Ingredients
1/2 cup sour cream
1/2 cup crumbled fresh goats cheese (55 g)
2 tablespoons snipped fresh chives
2 tsp white wine vinegar
Coarse salt and ground pepper
2 tblsp extra virgin olive oil
500 g chicken fillets
1 Cos lettuce, torn into bite-size pieces
225 g (2 cups) cherries, pitted and halved
1/4 cup walnut pieces

Method
To make the dressing, whisk together sour cream, chives, vinegar, and 2 tablespoons water; season with salt and pepper. Set aside.

Heat oil in a pan over medium-high heat. Season chicken with salt and pepper. Working
in batches, cook fillets until opaque throughout, 2 to 3 minutes per side. Thinly slice
chicken crosswise.

In a serving platter, arrange lettuce, topped with chicken, cherries, walnuts and
crumbled goats cheese. Toss in dressing or serve salad with dressing alongside.
