This delicious summery icecream is suitable for all icecream lovers, vegan or otherwise.
We use yellow peaches here, but you can substitute other stone fruits, such as apricots, nectarines or plums.

Preparation Time: 10 minutes
Freeze Time: 3 hours approx.
Makes: 10 serves

Ingredients
8 yellow peaches
1 can of coconut milk
1/4 cup of honey
2 tsp vanilla essence or 1 tsp
vanilla bean paste

Method
Cut up the peaches and remove the pips. Place into a saucepan with around a cup of water, put it on a low heat and bring to a simmer for a few minutes until the peaches are just tender,
and not yet falling apart. Drain the peaches.

Place fruit in blender with the honey, coconut milk and vanilla.

Blend on high until smooth and creamy.

At this point, you can either chill the mixture and put it into an ice cream churn before
freezing, or pour straight into a suitable container for freezing.

Leave in the freezer for at least three hours.

Once frozen, allow to sit for 5 minutes to soften before serving.
